Chickpea Jasmine Rice Recipe Prepared by using Eat Regal Jasmine Rice
Deliciously harmonious flavors unite in this Chickpea & Eat Regal Pre-cooked Jasmine Rice infused with carrot, creating a wholesome and satisfying meal that tantalizes the taste buds with a perfect balance of nutty jasmine rice, tender chickpeas, and the subtle sweetness of carrot essence.
Ingredients:
- Olive Oil: 3 TBSP
- Chopped Onion: 1 cup / 130 g
- Diced Carrots: 1 cup / 150 g
- Salt: 1/4 TBSP
- EAT REGAL JASMINE RICE (Pre-cooked)
- Cooked Chickpeas: 2 cup / 200 g
- Cayenne Pepper: ¼ TBSP
- Salt as per the taste
- Lemon Juice: 1 TBSP
- Chopped Parsley: 1/3 cup / 20 g
Instructions:
- To a heated pan add olive oil, onion, carrot, 1/4 teaspoon salt and fry on medium heat until the onion and carrot starts to caramelize. Adding salt to onion/carrot will release its moisture and help it cook faster so please don’t skip it.
- Add EAT REGAL PRE-COOKED JASMINE RICE and cooked chickpeas along with salt and cayenne pepper (please note cayenne pepper is optional).
- Add the lemon juice, chopped parsley and mix very gently. Check for seasoning and add salt if needed.
- Serve it hot.
