Lemon Rice & Vegetable Fried Rice Recipe
Lemon Rice & Vegetable Fried Rice Prepared by using Eat Regal Jasmine Rice

Ingredients:
- Olive Oil: 3 TBSP
- Mustard Seeds: ½ TBSP
- Cumin Seeds : ½ TBSP
- Finely Chopped Ginger: 1 TBSP
- Curry Leaves: 7-8
- Onion: 30 g
- Peas: 15 g
- Carrot: 25 g
- Red Bell Pepper: 15 g
- Red Paprika Powder: ¼ TBSP
- Salt: ¼ TBSP
- Turmeric: ¼ TBSP
- EAT REGAL JASMINE RICE
- Lemon Juice: 2-3 TBSP
- Chopped Cilantro leaves: 2 TBSP
Instructions:
- Heat a pan and add 3 tablespoons of cooking oil and let it heat thoroughly. Once the oil is heated, reduce the stove heat to low and then add the mustard seeds. When the mustard seeds start to crackle, then add the cumin and curry leaves and give it a stir and fry it for a few seconds.
- Now add the chopped onion, carrot, bell pepper, salt and turn the heat to medium. Fry until the onion starts to caramelize. Then add the finely chopped ginger, turmeric, red paprika powder and fry for another 1 to 2 minutes to get rid of the raw flavor of the turmeric.
- Further add the boiled peas, Eat Regal Jasmine Rice, salt to the pan and mix everything thoroughly. Turn off the heat and then garnish with lemon juice, cilantro leaves. Mix well.
- Cover and let it sit for 3 to 4 minutes before serving.
