Roasted Butternut Squash Rice Prepared by using Eat Regal Jasmine Rice

This quick and simple rice dish is bursting with incredible flavor!
Serve butternut squash with EAT REGAL JASMINE RICE, which is elegant enough for a holiday table and suitable for everyday dinners. It can be served as a robust main dish or a delectable side dish and is substantial enough to do both.
Ingredients:
- Cooking Oil
- Butternut Squash - ½ cup (150gm)
- Water
- Onion- ½ cup (50 gm)
- Carrots - ½ cup (50 gm)
- Green bell pepper + Red bell pepper - 1 cup (100 gm)
- Garlic - 1 TBSP
- Garam masala , royco mchuzi mix and mixed spices - ½ TBSP (each)
- EAT REGAL JASMINE RICE
- Chopped coriander leaves
Instructions:
- Set a large saucepan or small pot on medium heat, add the oil & let it heat nicely.
- Further, add butternut squash, stir and toss the cubed butternut for about 8 minutes. Then add water and cook for about 8-10 minutes more. Take aside the cooked butternut squash into a bowl.
- Take another pan, heat the pan to medium heat and add two tablespoons of oil to it.
- Add onion and cook it while stirring until softened and translucent. After that, add carrots, red bell pepper, green bell pepper, and garlic and cook it for a few minutes.
- Then add garam masala, royco mchuzi mix, mixed spices and salt. Mix well.
- Add some water (100ml), and then add EAT REGAL JASMINE RICE. Mix & cook it well.
- Add cooked butternut squash. Mix everything well.
- Garnish it with chopped coriander leaves.
- Serve hot.
