Smoked Vegetarian Spanish Rice Prepared by using Eat Regal Spanish Rice
This Smoked Vegetarian Spanish Rice recipe offers a delightful combination of smoky flavors, tender vegetables, and the convenience of pre-cooked EAT REGAL SPANISH RICE. It's a satisfying and nutritious dish that can be enjoyed as a main course or as a side dish.
Ingredients:
- Olive Oil: 2 TBSP
- Onion: ½ Cup, 70 g
- Garlic: 1 TBSP, 15 g
- Stalk Celery: 1 TBSP, 15 g
- Tomatoes , finely chopped : ¼ Cup, 40 g
- Green Bell Pepper: ¼ Cup, 25 g
- Steamed Sweet Corn & Green Peas: ¼ Cup, 20 g (each)
- Salt
- Red Chili Powder: ½ TBSP
- Eat Regal Spanish Rice: 1 Pouch
- Hot coal in a foil
- Ghee or Oil : 1 TBSP
- Cheddar cheese , shredded
Instructions:
- Heat olive oil in a large pan over medium heat; sauté the onions, garlic, and stalk celery. Sauté until softened.
- Further add the tomatoes, and saute until the tomatoes have become soft and mushy.
- Then add green bell pepper. Stir & cook on medium flame for 3-4 minutes.
- Add corn, peas, salt, red chili powder, EAT REGAL PRE-COOKED SPANISH RICE and mix everything together.
- While the rice is resting, we will proceed to prepare the coal for the coal smoking method. Heat the piece of coal on a gas flame until it becomes red hot.
- Once the coal is hot, place the coal in a steel or a glass cup. Place the cup in the center of the rice dish and press it down, so it rests.
- Pour a teaspoon of ghee or oil over the hot coal. You will notice the coal begins to smoke. Cover the pan immediately, to trap the smoke inside.
- The rice will get the smoke's flavors as it rests in the smoke. After a couple of minutes, remove the cup of coal (the smoke would have died down).
- Stir the Spinach Rice well to combine all the flavors and ingredients after the cooking process and serve.
- Sprinkle some cheese on the top and serve hot.
