Teriyaki Peanut Tofu Stir Fry Prepared by using Long Grain White Rice

Experience the perfect blend of savory teriyaki peanut sauce, tender tofu, served alongside a colorful medley of stir-fried vegetables. Paired with our hassle-free microwavable rice, this dish is quick, delicious, and packed with flavor!

Ingredients:

TERIYAKI PEANUT TOFU

Coconut Oil: 1 TBSP
Tofu: 350 g

VEGGIE STIR-FRY

Olive Oil: 2 TBSP
Broccoli florets : ¼ Cup
Zucchini: ¼ Cup
White Button Mushrooms: ¼ Cup
Carrot: ¼ Cup
Red Bell Pepper: ¼ Cup

TERIYAKI PEANUT SAUCE

Olive Oil: 2 TBSP
Chopped Garlic: 1 TBSP
Sesame Seed: 1 TBSP
Peanut Butter: 1 TBSP
Brown Sugar: 1 TBSP
Chili Garlic Sauce: 2 TBSP
Soya Sauce: 60 ml
Water: 30 ml

RICE BASE

EAT REGAL LONG GRAIN WHITE RICE (Pre-Cooked)

 

Instructions:

PREPARING THE TERIYAKI PEANUT SAUCE

  • Heat 1 tablespoon of olive oil over medium-high heat.
  • Add garlic, sesame seeds, peanut butter, brown sugar, chili garlic sauce, soya sauce, some water and combine all of the sauce ingredients together.
  • The sauce should bubble and thicken, stirring constantly to prevent the sauce from burning.
  • Once the sauce is thick, remove from heat.

PAN-FRYING THE TOFU

  • Heat 1 tablespoon of coconut oil over medium-high heat.
  • Add tofu cubes in the pan and cook until golden-brown from both the sides, about 3-4 minutes.
  • Take the tofu aside in a bowl.

STIR-FRYING THE VEGETABLES

  • Heat 1 tablespoon of olive oil over medium-high heat.
  • Add the broccoli florets, zucchini and carrot, mushroom and red pepper, toss, and cook for 3 minutes, stirring regularly.
  • Take the vegetables into a bowl and set aside.

PREPARING THE RICE:

  • Pre-cook the rice or microwave it for 90 seconds.

 

FINISHING THE TERIYAKI PEANUT TOFU

  • Take a bowl, pour pre-cooked Long Grain White Rice. Add vegetables and tofu on top of it.

  • Then pour the sauce mixture on it.

 

TO SERVE

  • Serve the vegetables and tofu on a bed of long grain white rice.
  • Enjoy!
