Ingredients:
- Olive Oil: 3-4 TBSP
- Tofu - 200 gm
- Chopped Onion - 200 GM
- Grated Garlic - 1 TBSP
- Dry oregano - ½ TBSP
- Dry rosemary - ½ TBSP
- Dry thyme - ½ TBSP
- Cayenne Pepper - ¼ TBSP
- Strained tomatoes - 250 gm
- Eat Regal Spanish Rice
- Vegetable Broth - 250 gm
- Fresh parsley - 10 gm
- Pink salt - According to taste
- Black pepper powder - ½ TBSP
Instructions:
- To a heated pan add the olive oil. Add the tofu and lightly fry one side for about 2 to 3 minutes on medium heat. Flip and fry the other side as well. Remove from the pan and set aside.
- To the same pan add the onion, fry on medium-high heat until the onion starts to caramelize. Now add the chopped garlic, oregano, rosemary, thyme, cayenne pepper and fry for another one minute or until fragrant.
- Add the strained tomatoes, mix well and fry until it forms a thick paste and the oil starts to separate.
- Add EAT REGAL SPANISH RICE.
- After that add vegetable broth and mix well and cook for about 3 to 4 minutes.
- Then add the fried tofu, parsley, pink salt, black pepper powder and mix very gently as the rice is fragile at this point and we don't want to break it.
- Cover and let it rest for 4 to 5 minutes before serving.
