Coconut Rice Recipe
COCONUT RICE Prepared by using EAT REGAL JASMINE RICE

It is a super easy and delicious one-pot meal fit for a feast that is surprisingly easy to make. And is also a perfect kid-friendly recipe.
(Coconut Rice is an easy and flavourful rice made with EAT REGAL JASMINE RICE, freshly grated coconut and with few spices)
Ingredients:
- EAT REGAL JASMINE RICE
- OIL: 2-3 tbsp
- CLARIFIED BUTTER: 1-2 tbsp
- SKINNED BLACK GRAM: 1 tbsp
- SPLIT CHICKPEAS: 1 tbsp
- CUMIN SEED: ½ tbsp
- MUSTARD SEED: ½ tbsp
- RED CHILI: 2 Nos
- CHOPPED CURRY LEAVES: 1- 2 tbsp
- ASAFOETIDA POWDER: ½ tbsp
- CHOPPED GINGER: 2 tbsp
- GREEN CHILI: 2 Nos
- SALT TO TASTE
- GRATED COCONUT: 5-6 tbsp
- CASHEW - 2 tbsp
- ROASTED PEANUTS - 3 tbsp
Method:
- Set a pan on high heat, add the olive oil, clarified butter & let it heat nicely.
- To this add skinned black gram, split chickpeas, cumin seeds, mustard seeds, red chillies, curry leaves and Saute it.
- Once the mustard splatters, add asafoetida powder, ginger, green chillies, peanuts, cashew nuts. Roast the nuts until they change color.
- Add the required salt and grated coconut. Keep the flame on low.
- Now add the EAT REGAL JASMINE RICE and mix well.
- Cook for a minute and mix well.
- Coconut rice is ready to serve.
