  • 2 tablespoons Olive Oil
  • 1 tablespoon Chopped Garlic
  • 1/2 cup (20g) Chopped Onion
  • 1/2 cup (20g) Tomato Purée
  • 1/4 cup Mushrooms (sliced)
  • 1/4 cup Bell Peppers (chopped)
  • 1/2 tablespoon Salt
  • 1/2 tablespoon Black Pepper Powder
  • 1/2 tablespoon Turmeric Powder
  • 1 pouch Eat Regal Jasmine Rice (pre-cooked)
  • 1 pinch Saffron (optional, for colour and flavour)
  • 1 tablespoon Chopped Jalapeño
  • Fresh Parsley (for garnishing)
  • Lemon Wedges (for serving)

Instructions

  1. Take some olive oil in a large pan and heat it in medium until warm.
  2. Next, add some chopped garlic & onion and sauté them for 1-2 minutes until the onions turn transparent.
  3. Now stir the tomato puree and cook it for the next 1-2 minutes until the puree thickens a little.
  4. Also add mushrooms and bell peppers and sauté them for 2-3 minutes until they get softened.
  5. Take salt, black pepper powder & turmeric powder and mix it well.
  6. Add the pre-cooked Eat Regal Jasmine Rice along with a little pinch of saffron and chopped jalapeño and mix them properly and ensure they are mixed well.
  7. For the last step use chopped parsley for garnishing and serve the rice bowl with lemon wedges on the side. Enjoy hot!
